Our Organic Stewed Broccoli Rabe are a 100% Made in Italy product made with Broccoli rabe just harvested from our greenhouses in Puglia
The product par excellence of the Apulian culinary tradition is obtained with Broccoli Rabe from our certified organic farm and with the addition of organic extra virgin olive oil.
For the production of Organic Stewed Broccoli Rabe, freshly picked peaks are used. After having washed and cleaned the stiffer stems and yellowed leaves, they are cooked in water previously brought to a boil until they become slightly more tender. They are then drained and left to cool.
Once cold, they are seasoned with a mixture obtained from the combination of oil, spicy oil, lemon juice, apple cider vinegar and salt.
The product thus obtained is placed in jars, which after being hermetically sealed, are placed in the baskets for pasteurization where the turnip greens complete the cooking, remaining immersed for 15 minutes in water brought to a temperature of 102 ° C, up to reaching a temperature of 87 ° C at the core of the product itself.
Upon opening, you can immediately smell the scent of Broccoli Rabe and lemon juice and then the aroma of oil and vinegar.
The particularly strong slightly acrid taste typical of Broccoli Rabe, slightly bitter.
